In the Philippines, noodles or pasta is a must on the menu of a birthday celebrant. I'm not sure why but I guess it has something to do with this old belief about noodles or long pasta signifying long life for the celebrant. lol. My friend celebrated her birthday last Saturday and she requested me to cook a pasta, a non-tradition one. Not red. Not spaghetti noodles.
While doing our groceries I was trying to remember the ingredients for an asian pasta. I thought of making a pesto but I'm not sure if her guests would like it PLUS there are no pine nuts available in our local grocery.

So here's how I made it.
Ingredients:
450g Pasta (Fusilli)
250g Chicken breast (sliced)
1/2 block of extra firm tofu (cubes)
200g Snow peas
250g Young corn
120g Peanuts
5.5oz Oyster sauce
Sesame Oil
2 cloves Garlic (sliced)
1 red onion (chopped)
1 cup water or pasta water (preferably)
Flour
Salt and pepper
Method:
1. Cook pasta per package instructions (Al dente). Set aside.
2. Fry the tofu until golden brown. Set aside.
3. Saute garlic, onion, peanut and chicken meat in sesame oil until slightly brown.
4. Add oyster sauce and carefully pour in the pasta broth. Simmer for 3 minutes.
5. Add the snow peas and young corn.
6. Dilute a teaspoon flour in a 2 tablespoon water. Gingerly add the diluted flour according to your desired thickness of the sauce.
7. Salt and pepper to taste.
8. Combine the pasta and sauce top it with your fried tofu.
9. You can sprinkle a little bit of sesame oil or chill flakes for more flavour.
